Something to warm you up....

Good evening friends. I hope all of you have had a good day. What is the weather like where you are? I know so many of you had snow already while some of us have been experiencing warm weather and dreary rainy days. It has been so dark and rainy here for the past four days! Blah. HOWEVER...we are supposed to get a huge blast of cold air during the day tomorrow and possibly get to see a few flakes. For those of you who see snow all of the time, don't laugh. Us folks here in the south get real excited at just the mention of the "s" word. Darbee Rae is in high hopes of seeing some. Not expected to see much if any accumulation though.
When cold weather is here, I am a huge fan of soup. I am also in love with my crockpot. I had one but asked for another one for Christmas. My mom and dad gave me a pretty black and white one. What an easy way to cook a meal. One dish in one crockpot and a side in the other. Hehe.
I am also in love with Pinterest. Aren't we all? I found a recipe for crockpot potato soup. The ingredients made it sound delicious. I knew a dreary, rainy night like tonight would be a perfect night for it.
I thought I would share the recipe with all of you. You can't get any easier and it was absolutely delicious!
EASY CROCKPOT POTATO SOUP
1 30oz. bag of frozen, shredded hash browns {I used Ore Ida}
3 14oz. cans of chicken broth
1 can of cream of chicken soup
1/2 cup onion, chopped
1/4 tsp. ground pepper
1 pkg. cream cheese {don’t use fat free. It WON’T melt!!!}
In a crockpot, combine everything EXCEPT for the cream cheese. Cook for 6-8 hours on low heat. About 1 hour before serving, add cream cheese and keep heated until thoroughly melted. Serve with cheese, sour cream, bacon bits, green onions, or whatever else you think would be good!!

You can find the recipe here.

I hope you enjoy!
Until next time......

  7. I love soup too. I wish it would go over well at our house. Put a bowl of soup on and you had better have a pretty darn good main course to go with it:) It has been so cold here. I can't remember the last time it was this cold. I wish my doors would ice over so I didn't ever have to go out!!! Hope you get some snow. We have had way more of it than usual and the kids have been going sledding with thier Dad plenty. I stay home:) I can't figure out the Crock Pot. If anyone could mess up a crock pot recipe it's me. I use the delay timer on my stove so I can fix the meal put it in there and set the timer to go on when I need it too and shut off when I need it too. Have a great day.
